Lettuce Wraps- Easy as 3-2-1


A quick, easy and healthy lunch is lettuce wraps. I found a SUPER simple way to make them at home. First you have to use Butter Lettuce or Romaine leaves. Iceberg is too crunchy and breaks apart when you try to fold it over and has no taste at all.
Then get canned chicken (you'll find it in the aisle with Tuna). Drain it and mashed it up with a fork if you like smaller bite sizes, like me.

Now here is the 3,2,1 part. For the sauce combine 3 tablespoons of Hosin, 2 table spoons of rice vinegar, 1 tablespoon of soy sauce and 1 tablespoon of sesame oil. Then spoon the chicken into the lettuce cups, top with the sauce and then use crushed peanuts or chow mien noodles for little extra crunch.

You can always mix in some water chestnuts or some green onion for extra flavor. There are many different, yet still just as easy variations you can do on this recipe. But for me the quick and easy is the best way to go.

Flowers make everything prettier

So after a long day of yardwork with LOTS of help from my mom, we finally cleared the sideyard of all the dead the tree limbs we cut down a few months ago. It only took 6 full green bins to finally get it out of there and the one thing left now is to cut the Christmas tree up and put it in the next run. Yes, you read right Christmas tree in August. I put it in the backyard early January and been waiting for the neighborhood pick up that usually happens around that time, but it seems like maybe the City isn't doing that this year as I still haven't received my notice of pick up. So now a broken lawnmower, bent trellis and other junk has been piling in my backyard and garage along with a very dead Christmas tree.

After a very successful day of yardwork I spotted a real pretty hanging plant that looks to be drought tolerant, which is good because I tend to forget to water plants.. I went back to Target this morning and decided I'm going to pretty up my front door. So I bought the 2 hanging succulents with sweet yellow and red flowers and then bought 4 asparagus ferns and 2 snapdragons for the 2 pots that have been sitting empty since the lavender plants died in them last year. Now I have a new pretty walkway up to the front door, and with newly fresh cut grass and weeds pulled I can enjoy the view from the couch, while I try to recover from my first day back at bootcamp and hours of yardwork that have left me without the use of my upper thighs...
